Advice Change of look

I decided to have a more sport drivable car on the streets, sold the 20s, got rid of the 3d carbon front and im selling my p springs.

Bought laguna seca rims 19 x 9 fronts 19x10 rears, roush front splitter and k springs.

Here are some old pics of the car on rhe 20s. Reason I did this is because I want to a smaller overall tire for better mpg and better acceleration and overall performance.

The advice I need is the following...
Do I do a 26 inch tire or 27 for my a6 3.15 gears? Hankooks v12s

26 inch would be 275/30/19 fronts 305/30/19 rears hankooks v12

27 inch would be 255/35/19 fronts 285/35/19 rears hankook v12

Which would be more beneficial? Remember this only applies to both performance and mpg on the streets, I have drag radials so not for track intended.

I would get a 19x9.5 and19x11 rim and put a 325-30-19 on the rear. 275-35-19 on the front.

And k springs suck. The spring rates are stupid high. You actually need some weight transfer for traction.
