Front and rear tire sizes

I have a 1990 gt suppose to have been lowered 2 in I'm starting my search for new tires I have a set of cobra Rs 17x9 with 255/40 r17s wondering if I should go with a different size tire or if I even could

You can easily fit some 275/40s on a 17X9 if you wanted to

It's up to you really, 275s will fit no problem, but at the same time they're more expensive and there's the potential for the car to wander a lot if you put them on the front

What's better for corners, staggered or equal all around?

Depends on the driving characteristics you want. Staggered will have a lot of under steer compared to a square setup

They will both get you there, it just depends on how you would like the car to react. There isn't really any better or worse setup

I just want a good all around tire for the road I have my drag tires on separate rims these will be for highway driving
