What's the biggest tire I can fit on a 18x9 wheel ?

What kind of wheels do you have? If you have (for example) 03-04 cobra wheels like mine you can actually order some wheels on eBay that come with 315s on them. Wider wheel and tire, or you can buy a deep dished cobra wheel and put 315s on this or 295s if you want to. I'm going to order the wider cobra wheels. It'll look stock from the side, but from the back I'll have fat tires

Yeah lead going to get deep dish in back but they don't make 18" deep dish mach 1 wheels

Dang. Do they make just wider Mach 1 replica wheels??

Wider does not always=better. You get a wider footprint with the 275 but the sidwall will flex more and the ride will be sloppier than something like a 245 or 255. IMHO if you are running all 4 rims the same size to rotate tires, run a 255/40/18 on 18s or a 255/45/17 if on 17s. I prefer staggered in which case I'd still do the 255 up front (or 245 if it was a better $$ deal) and a 285-315 out back.
