Pinion Gear Shims

Down to business:
2000 V6 7.5 rear end w/ production 3.27 gears. Looking to upgrade to the T-Lock limited slip and a gear swap to 3.73 or 4.10, not sure yet. I considered the 8.8 from a salvage yard, however I dont want someone else's past trouble and I already know my 7.5 is in great shape and not look to run over 300 HP.
With that said, the pinion gear install has me a little concerned, been hearing horror stories from others, but I still want to attempt it myself. When the pinion gear is installed, it is my understanding that the shim washer goes between the hub and the bearing, then install and torque down and check run pattern. So, if you have one known, the original ring and pinion and shim used in that set up, I still have two unknowns, the new ring and pinion gear. So what to do? Also, if I miss on the set up then I have to remove the entire pinion and disassemble without screwing up the bearing and try it again? Will removing the press on bearing ruin the new bearings?
I have done a lot of research, but I am still a little confused about part of the install.
