Well, with the 5.0 you're probaby going to want a donor car. Then you'll have all the engine components, harnesses, ECU, etc. If the car is a daily driver, I'd stick with FI. If it's a weekend cruiser where you're not concerned about maintenance and mileage, you could carb it.
The 351 windsor would be different. It would take more work and probably some modifications to the engine bay. People have done the swap before so it is possible.
Either way you'll want to upgrade your drivetrain, suspension and brakes if you do swap engines.
