Or you could find a 96-98 GT 4.6L engine, do a PI head swap from a 99+ 4.6L and have ~260hp 300 tq at the flywheel.
This would get you the v8 for a decent price without the hassle of a major project. Most engines come with harnesses and ecu's. This way your at ~230 rwhp, more than even a built single port v6 for much less money...you could always build up that engine or add bolt ons for more power...plus you have that v8 torque...something the v6's won't have.
I say go for the v8 swap...it's easier in your model year car and buying a bigger v6 and building it will cost more. It's up to you though, if you want a bigger v6 then do it, there are plenty of guys out there who have the 4.2 build and are happy with the results.
