On a 2002 3.8 V6 on a nice day 50 degrees outside driving at 30 to 60 mph.
gets to the half gage mark after 8min or so.

Is that o.k?

Neither of mine have taken that long, but that doesn't seem too bad. I had recently replaced my t stat, installed a new Rad and flushed mine though. It'll warm up in just a couple minutes sitting at an idle at about the same outside temp as you.
