Help

So I have read about removing cat but I don't understand how to do it and also how hard it is any advice

The cats have to be cut out. Then replacement cat or pipe (if deleting cats) have to be welded in place. Take it to a shop.

You can get an off road midpipe and when you need to put the cats back on just bolt it up.

or if your state requires a visual inspection to pass inspection, you can just gut them. it basically means how it sounds and it'll sound the same as if you had piping there.
