From what I've heard, just the newer 'stangs. In summary, it's only "possible" (I use that term very loosely) on the DOHC engines. Something to do with the separate intake and exhaust valves... I'm probably way off with the terminology. Gearheads, feel free to critique me (still learning).

So far, I've only seen it for the new 5.0 & 3.7 engines due to them having the Variable Cam Timing. I have heard rumors of a few 4.6s testing a ghost cam. I'm just not sure how they did it.

A user posted a video of the 4.6 'ghost cammed', but then another user said it was "outed." Man I wish there were gc's for the 2v and 3v's!
