Smog AND A/C delete

im in the middle of a complete engine rebuild, motor and tranny pulled out. now i know in the process you can delete the a/c and smog pumps in order to spin less on the serp belt and gain some hp. my question is can you do the deletes and not have to install those delete pulleys or is there a way to run the belt with only water pump, power steering, and alternator with a shorter belt? or if anyone knows of any tricks or tips to do this whole process and gain more hp? this is my first build and i just want to do it all right the 1st time
