I don't know exactly how much, but you could search the Mustang GT Registry for the figures if you really want to know.
A glass hatch will remove a lot of weight, especially if you use a Lexan rear window with it, but really you'd be removing weight on the wrong end of the car. Mustangs are predominantly front heavy, so weight loss efforts produce better results if you concentrate on the front end first and move to the back when you have totally made up your mind what you want to accomplish with the car.
I put a glass hatch and Lexan window on my 86 GT, but I'm also moving the battery to the back and installing a 6 or 8 point roll bar.
