Holley style carbs are your best choice IMO.I have owned many others over the years and as a rule they were all either difficult or impossible to tune correctly or they wear out quickly.
I'd go with a 650 -750 myself with my personal preference being the 750 for a 351W.
You can tune it to operate at lower HP levels and then kick it up quite a bit for higher power when you need to.
I would also recommend a Super Tuning Holley Carburetors book by Alex Warlordy
. It was one of the best investments I ever made when I was running Holey carbs. However it is out of print and may be expensive. An alternative might be - Super Tuning & Modifying Holley Carburetors by Dave Emanuel
Nowadays, though I would be more inclined to change it over to fuel injection.
