Choose the cam after you have the heads, intake and exhaust mods you are going to do. You will want it to work in harmony with those parts.
In all seriousness your girlfriend may end up with one heck of a hot rod Merc, but the gas mileage is going to be pretty poor.
Are you sure she wouldn't be better off just replacing the stock 460 heads with some stock heads and get her into a 5.0 Mustang instead?
The 5.0 can be modded to produce some pretty good power and still retain decent mileage. Mine puts out around 405 HP and I can still manage 22-26 mpg on the highway if I drive sensibly.
