How do I install a tach with a carbureted engine, and a fuel gauge

The tac will have instructions. But if you have an msd box the signal wire will go there. If not then it will go to the - wire on the coil. Then there are probably 2 other wires, a ground and 12 volt wire if there is a light.

The fuel gauge really depends on which kind you have but they are pretty easy to. You will just have to tap into the fuel line somewhere. I bought a fancy line at the carb that has one built in.
