Electric Fan Thermostat Question

This has probably been covered many times over but I have some concerns. I have a two speed electric fan from a late model Taurus in my 87 GT with factory temp thermostat in coolant neck until i decide on a new fan and radiator assembly. I am wondering what would be a good rout for a thermostat kit to wire up the fan. Would an adjustable thermostat kit be the best option as i'm going to soon change my radiator assembly or a fixed temp on/off system and any recommendations on what brand to get. Any help is greatly appreciated
