Have you checked fuel pressure? And when is the last time you replaced the fuel pump and fuel pressure regulator?

Alright. Well just to have a good foundation to start out on. Have you checked your tps? That along with fuel pressure is key. Also I have a notchback that would fall off at 5000-5500 rpm and it turned out to be a crimped fuel line and a undersized fuel pump.

The fuel line was crimped right before the fuel filter. The previous owner thought it was a fuel pump problem and didn't even see the line crimped. Lol. I replaced the new stock spec pump with a 255 and a new line and the car is a totally different car.

There is only one filter, not sure what else you think you replaced. The stock foxbody bump is 88lph which is BARELY adequate for a stock motor and when it starts to go even a little bit you will not get enough fuel. An easy way to troubleshoot would be it to install a fuel pressure gauge in the car but you can always check what it is at idle at least with an external gauge and see if it looks funky at idle.

Scotty is right about the fuel guage. I like to have a wideband afr and a fuel guage. Two guages are very expensive. But they allow you to see what's going on.

In all honesty if you REALLY want to see what is up you should rip out the entire stock cluster and install a Florida 5.0 prebuilt cluster and then tack on a pillar or clock pod with wideband/fuel press/vacboost gauges. The stock gauges are "ballpark" gauges.
