Thermostat issues

I have a dual electric fan set up with a four row radiator, I started with a 68c thermostat and the car ran fine, fans cycled on and off properly and at the right temp. Thermostat went out replaced with 180f and my fans wouldn't turn off, so I bought a new 68c and it's now seized up. Coolant is clean and system has been flushed, radiator is within a year old, at this point I'm thinking of just pulling it completely and see how it runs. I know it's not gonna warm up properly, but don't know how else it would affect it. Any info or suggestions appreciated. Probably gonna pull it out tonight after work.
