My first suspicion would be the Idle Air Control valve.

One of the signs of a bad IAC is if you put your car in gear and it dies!

Does it only do it when you put it in reverse?
What about drive?
Just on cold starts? Or after it is warmed up, as well?

Intermittent problems can be difficult to diagnose.

How long has it been since the car has had a good servicing? Tune up, fuel filter, transmission service, etc.?

It got new spark plugs about 5 months ago and my Cai filter was changed at that time also but everything else I haven't changed and I bought the car about a year and a half ago and it had 108k miles on it now it has 124k miles on it

Ok. Well start doing the rest of the maintenance as you get the time and money.
1.Replace fuel filter
2. Change transmission fluid and filter.
3. Clean Throttle Body.
4. Clean Mass Air Flow sensor.
5. Change rear end gear oil.

Number 5 obviously couldn't cause your stalling problem but all of the rest of the items might, possibly, have an effect on the idle... Including the transmission.
And they are regular maintenance items anyways. This way, you can eliminate all of the simple things. Also, it never hurts to get the charging system checked out.

Now the car keeps reving up and down to about 1000 rpms and if I don't keep my foot on the gas at a light it will die so it's the idle air control valve still right

Yep.
Still sounds like the IAC.
Make sure to disconnect the battery when you change it.

Yes.
I highly recommend Motorcraft or a part manufactured by Hitachi.
