First, you should check for any trouble codes. There may be a code even if the Check Engine Light is NOT lit.
And secondly, check for any vacuum leaks.

Did this begin after you unscrewed the idle sensor?

It shouldn't, necessarily, hurt it but it is better if it idles at around 750 rpm's.

How long has it been since the engine was last tuned up and the filters changed and the Throttle Body and MAF sensor last cleaned?

Like I said, check for any codes first.
If there are none, we can walk you through the list of maintenance items and, hopefully, get your idle straightened out.
A dirty TB can be a cause as well as the Idle Air Control valve, and a number of other things!

Also, if you are going to have a parts store check the codes, have them test your charging system while they are at it.
