It looks like I was mistaken when I told you that the shifter end of the cable was accessed from inside of the car.It looks like the shifter protrudes out through the transmission tunnel, and the entire shift cable is accessed from the underside of the vehicle.
Did you remove the cable and determine that it is not the source of the sticking shifter?

The repair manual does not have any specific instructions for removing the shifter mechanism... So it must be self-explanatory. There are likely more fasteners holding it down that haven't been removed yet.

I can see the end of the cable inside the car . I pulled on it with needle nose pliers and it seemed good ! The actual plastic assembly squeeky and I think might be the issue but no idea how to remove it llol

This is underneath the plastic assembly . I can see where to disconnect the cable but I don't have much room . Need to know how to remove that while assembly so I can replace it

Keep in mind that my cars are manual transmission... And I'm using a repair manual as a reference.
Those photos that you posted don't look like the shifter photos in the repair manual that I'm looking at. What they show in the manual is, the cable bolts onto the shift arm of the transmission, so it is adjustable. The end of the shift cable that attaches to the shifter mechanism, is held on with a nylon locking sleeve which is pried off with a screwdriver for removal.

I could be mistaken, but the cable that you photographed looks like the parking brake cable???

This is underneath the car.

The other pictures were of underneath the actual shifter . I took the whole centre consol out to see how it was still attached.
I feel if I take off the metal plate it will come off but looks like there's a gasket maybe foam

If you Google "How to replace automatic shifter 99-04 Mustang" there are some threads to read, and Youtube videos to watch.

Maybe just focus on removing the cable so that you can determine if it is the cause of the problem.
Here is a thread with basically the same instructions as the repair manual.
