For the automatic 4.0, would 3.73s or 4.10s be better considering both pull and mpg

3.73 are a better balance for automatics. The autos are already running to high of rpm at 75 mph to obtain optimal mileage. The 4.10 are much better for acceleration (and for blowing up 7.5 axles). A little rough on the cruising mph from what I hear.

Do they still have a big enough difference compared to stock to buy em?
