I wonder what exactly it is that makes it smell like that?

The vinyl and plastics. The smell goes away about the same time the "foggy" residue clears on the inside windshield. For about 6 to 8 months, the inside part of the windshield glass will get a fog type appearance; this is from the dash vinyl. Once it drys out a bit, that fog stops, but so does the new car smell.
