Less than 800 miles since the oil was changed

and I am almost a quart low. Is that even possible? Or when they changed it, they may not have filled it full?

Happens with the new 5.0s on the regular. Keep an eye on it and remember the stick only measures the top 2qts.

I have 2000 miles on my last oil change and its not missing a drop.

Its possible they didn't reset your "Engine Oil Life % Remaining' Meter located in the 'Info' button underneath your headlight switch . That has happened to me in the past.
