I'm sorry to hear about the issues you've been having with our tunes. We can definitely get this right for you! We send out thousands of tunes and build them all from the ground up for your PCM code and your mods. They're not just "canned" tunes, they're built custom by our team, so every once in a while it's possible we mess one up!
It's very normal to see around 26-27 degrees of timing with an 11+ GT. However, some cars just don't accept timing the same way. Most 4V motors accept that amount of timing fine, but everyone once in a while we need to pull some out for the car to run perfect. You definitely shouldn't be pinging on all of your tunes! How is the gas quality in your area?
