3.55 gears on stock tires will be fine on stock limiter. You'll cross the line near the top of 4th.
The reason raising the limiter is useless with stock manifold is that the 5.0 coyote motor with the stock 5.0 manifold will start losing power after 6600rpm. By 7000 it will have dropped from its peak at 6600 to about 15-20 less whp and by 7600 it will have decreased by almost 30-40whp. So you're going slower because you have less power.
The only time you want to increase the limiter without changing up the intake manifold is if you are making some serious power and it's causing you to have to shift into 5th gear before you cross the line. Then increasing it would work because then you can still shift at 6600-6800 but can hold 4th gear longer to 7000-7200 and cross the line.
But this serious amount of power is probably by nitrous
or forced induction and if you're staying with the stock manifold you will probably be better off installing taller gears like 3.31 or getting taller tires than increasing your limiter.
