Would a e85 gauge be necessary for a N/A 2015 5.0

I don't think so... I just switched to E85 a month or so back and don't have one.

Maybe if you have really sketchy gas stations where you are located. Since you sound like you are not trying to squeeze every ounce of power out of your car with just an NA build I'm sure you'll be fine without one.
