it's a home fermented drink

like apple wine. all you do it get a glass jug of apple cider and sit it out in the sun for 6 months to a year. it'll ferment over time, and be like a rich wine

mead is a little more complicated, but basically the same process if i remember right

IT's basically honey wine. It'll take around 6 months to be good and ready. If you've never had it, it'd definately something to try. Warning however... A mead hangover can last 2 days, possibly longer...

I'm trying to figure out ho I want to botle it now. I'm thinking of using the 16 oz flip-top bottles, like grolsh. Shipping prices are high, though. at least I have time to do the research so it doesn't cost me a fortune.

Is it just put it in the jar, seal it up, and let it sit? I might have to try this...

no. You have to allow it to ferment, and vent off the gasses fermentation produces. have a look at the gotmead site for more info.

I don't like the store stuff. It doesn't taste real good to me. That, and I live in Oklahoma, in the bible belt, where all domestic beers are 3.2% (by a very old law that dates back to segregation days) and I can't immagine, if I was even able to find it here, how expensive it would be.

You can also make many different types, and flavor them however you want. My next batch will more than likely be (5 gallon size) pomegranite flavor.

And, it's cool to be able to do it yourself.

if there's a container store near you, check that out. i'm sure they'll have something that you can use

i'm seriously considering doing this now. i think it would be a lot of fun i'll see what i can do after i get a little bit more money for supplies...

Isn't this what dem good ol boys used to do back in the woods, people call it 'shinin.

I always wanted to try some mead, my literature teacher brought a bottle in from her house because we were going over Beowulf. Drunken vikings.

Not really. I'm not distilling anything. I'm merely fermenting a solution of honey and water.

And man is it going. It's bubbling once every four seconds. I'll sample a bit in about two weeks, and see from there if it's ready for bottling.

for the type I'm making (called sack mead) it'll take about two weeks, and can age upwards of two years.

Yes, you can drink it after two weeks, but it's way better aged.

does the alcohol content increase over time, or will it reach it's peak in a couple weeks?

Update

still fermenting like a champ. If the scent coming off the air lock is an indicator, this is going to be a seriously potent/flavorful batch. I'm currently trying to "empty"enough grolsch bottles to prep for bottling in the next two weeks. Wish you's guys could smell this, it's going to be so so so swweeeeet.

*update*

the first phase is complete, now I'm going to let it sit for about another two weeks to let all of the yeast wear itself out. I had a little taste today, and it tastes soooo nice. It'll also probably knock me on my ***. I'm really getting excited now!
