Pork BBQ, how widespread is it?

I know here in NC we have at least two different styles, Eastern NC and Lexington, NC style...

Re: Pork BBQ, how widespread is it?

I think the big differences are in the sauce and the slaw here in NC, probably a lot of different sauces all over. Also there are pulled sandwiches, sliced sandwiches, and chopped sandwiches.

Sandwiches? I'll take a fork and a big plate with a ton of sauce over a sandwich.

Re: Pork BBQ, how widespread is it?

I have run up on a few people that tried to tell me only beef was real BBQ, that is why I started this one, LOL. Oh yes, we have BBQ plates, and BBQ trays, plate is with meat, slaw, and FF, Tray is with meat slaw and just hushpuppies I think. Both get Hushpuppies.

Hushpuppies are a must, especially with Delta raised catfish.

Re: Pork BBQ, how widespread is it?

Heh, me and my dad cook whole full grown pigs for parties on the side up here. This summer I have cooked upwards of 30 pigs and cut up/pulled somewhere in the area of 4500 lbs of pork.

I used to love pork but now after being around it so much I'm lucky if I can have a sammich. Loin is awesome though.

A lot of people have parties here they call "pig pickens, where they BBQ whole pigs like that and let everyone serve themself. The one I went to once had lots of cold brew too.

Re: Pork BBQ, how widespread is it?

We call them that too. Always have one every year at our house with upwards of 500 people coming. Pays to have a big backyard when you throw parties.

Oh and we always have plenty of cold brew. And tequila. And vodka, rum, schnapps.....

Yes lots of drunk pork eating mofos.

Re: Pork BBQ, how widespread is it?

I'm sorry, but bbq was started in the south and will always be better in the south. I think the best pulled pork I've ever had was from a random tailgater last year at a football game lol. It was awesome, they had to make me leave.

Any one of you, I dare you, come to Alabama, and go to Decatur. Ask anybody up there, just anybody, where to eat bbq. You will go. You will eat. You will change your mind.

Re: Pork BBQ, how widespread is it?

Sauce?

What's that?

Out here bbq is slow (as in all day) smoked meat, not something drowned in a tomato based sauce. Gotta do something with all this mesquite.

All over down here as well. However, if you happen to be in or around Rochester, NY some time, check out Dinosaur BBQ in downtown. It is as just like Ponycarman described...it is the best I have ever had. Their Big *** Pork Plate is my fav by far.
