Should I go with a late fox body HO motor or the 5.0 gt40p?

Are you looking for a stock drop in motor or are you looking for a base to build one?

The factory 87-92 mustangs had forged pistons which would be better for boost or nitrous. In 93 all 5.0 engines came with hypereutectic pistons till 02 and is fine for n/a applications. If you plan on replacing the rotating assembly then any 5.0 block from 87-02 will work.

I'm looking at a ford explorer 5.0 gt40p heads, for my 68 FB. would you know if I have to change the valve springs in order to swap out the cam for a performance cam?

I would recommend it but its not really necessary for a mild cam.
