yea, on a restoration you can do it right or cut corners and do it half assed. Doing it right means spending alot more money, time, and money on the car adn expect to be working on it for a VERY long time
You can find a good many cars in the years you listed, they made a ton, just finding one in good enough shape (not rusted though a little surface rust is ok) is the hard part. Also check the underside and floor boards.
In todays market you can find prefabed EVERYTHING just about for them so~ if the frame and body are good you can replace fenders, doors, etc etc
