the interoir on my 89 lx is faded a bit. mainly the dash and centre armrest console. can i dye or paint them so they will actually look decent or should i just buy brand new ones?

Yes, you can paint them, and if done correctly, make them look as good as new, if not better. Check out Latemodel Restoration Supply. They carry several different color interior dyes that are made to match the original Ford colors.
