Demon 650 would be perfect for it probably.
Demon carbs seem to have better low end than a Holley.
If you want cheap then try a Holley 600 Vacuum Secondary, or a
Holley 650 Double Pumper. Or just get the jetting kits for your 750
and make it work. If it is a vacuum secondary you can make it respond
fairly well on even a 5.0 sized engine. It's all in the tune. Somewhere
out there you can find a jetting chart (starting point) for your setup,
and that will be darn close and it will run good. Good Luck Andrew!
PS: A generic Holley 600 (4160 I think) would probably be really good
since most of them are setup for a mild 350 ch*vy which is about right
for a good 331 stroker. A 4160 for the Ford 5.0 would be a good economy
carb for your 331, getting better mileage but still make good power.
