I am thinking about building a nice street strip car and wanted to get a Mustang. I want to get a 5.0 with a 5 speed and convert in to a carb car with 100 shot . what is a good head and intake combo? i plan on spending some money for a good set of heads
First of all, I'd say to stick with fuel injection. There really isn't that much of a benefit as far as power goes by switching to carb. Yes, you will have to take it somewhere to have it tuned, but you will probably be happier with EFI in the end. There's a reason that car manufacturers no longer use carbs.
With that said, I'd recommend AFR 165 heads (Air Flow Research) and an Edelbrock Performer RPM intake or a Ford GT-40 intake for a good street/strip combo. I'd also recommend you check out Flowtech Induction for a custom cam.
If you are set on a carb, raise the compression and use heads such as the AFR 165's mentioned above
or the cheaper Twisted Wedge heads... then an Edelbrock Vic Jr. or a knock-off import copy (cheap)
then run a big cam with tight LCA and you will make some awesome power. I'd run at least 7K
to make it worth it. If not, then just stay EFI. You will make more overall power with EFI at lower RPM's.

PS: I will help you get a custom cam, direct from the mfg. and it's cheaper
that way. I'm pretty darn good at cam speccing and I've had some 5.0's myself

Yeah, I'd listen to these guys about sticking with the EFI. I swapped my injection for a carburetor in my old Camaro. I regretted it. Made more power after the swap, but carburetors are so finicky. It made using the car kindof a pain in the ass.
The DEMON carbs have great road manners if you buy the right one for your application.
Definitely worth the ~$600 (or less) for the Demon carb, it runs correctly right outta the box!
