Hmm, he gained most of his fame from V6's, but he has just finished making a couple 5.0 kits. He might be able to make you a kit for the 351. You might shoot him an email. He would probably need good dimensions for your engine compartment though...
Be an interesting carb setup. It's been done before on the old Shelby's with superchargers.

I personally wouldn't do a FI setup on a carb car for a daily driver. Instead of having a computer adjust the AFR, you will have to do a lot of adjusting over time. I would suggest a stand alone nitrous plate kit to go under the carb. That way no matter what the added nitrous will be balanced with added fuel.
Or you could go with a small dry shot like this one.
