For instance, with the borla stingers, would there be much difference in sound between the axleback and catback? Since the catback is almost $200 more i believe. Also does the catback add any power?

Won't see more then 3 to 5 HP increase. Axle backs replace just the muffler and tips while a cat back replaces everything behind the y-pipe.If all you want is the better sound and plan on keeping the car stock for the most part then the axel back is all you will need.
If you plan on modding get the catback cut the y-pipe and go true duals .Some people claim they lost power going true dual which is false. True dual just moves the power curve up the power band It's a even fire motor so you don't lose back pressure

if the pipe is the same size its worthless as its just pipe, with a catback or an axleback it wont make a huge diff in performance.

The cat-back does have gentler bends in the piping than stock so exhaust flow is slightly better. As stated above, the sound will be the same but it all depends on if sound is enough or if you plan on heavy modding down the road. I noticed the Borla to also be lighter weight than stock but we aren't talking massive difference or anything

Yeah its my dads so i dont think we would do much more that cai and exhaust. Also how does the sound of the borla stingers axleback compare with the loudmouths and also slp power flow?

I love my Borla's and many people will attest to the sound of Borla's on all years of Mustangs AND other cars.
