I'm thinking about pulling my 5.0 (302) and going to a 351. Will the GT40 heads and intake bolt straight on or do I need new ones

You will have to enlarge the holes for the head bolts, the 351 uses 1/2 inch. The 351 is wider so you would need a new lower intake that matches your upper.
