On my 02 I use one of those 5+ jugs then 1 extra quart so sounds close to me.

6 quarts always puts me low. Right around 6.5 is where it reads full for me.

Go buy another 2 quarts and keep filling until you read full. Pretty easy solution here, bro.
It's more than likely 6.5.

About 6.5 for my 96. Puts it right at full.

my 03 4v motor reads off (not accurate) so be careful. On mine you have to run more than the required 6 qts to get it to read what you the fill line is~ dont over fill! go by what the book recomends.

As far 4v guys in the 03/04 cobra the oil pan can run more than 6 (up to 9 they say... but I have ran 6-7)
